Vegetarian stuffed green bell peppers!
We used Smart Style soy ground beef substitute (which can be found at Meijer) instead of beef.
We also added diced tomatoes with green chilies to add a little kick, and a few dashes more garlic powder than called for.
It was just the right amount of spicy, and we cooked the peppers for 26 minutes, which made them just the right kind of cut-able. We wanted to both eat two of these giant peppers, but they were incredibly filling, which was happy because it meant leftovers!
